For the other one, I would consider keeping the thin leader, and trim it (At the right time appropriate for backbudding, AFTER the plant has taken enough rest after transplant). Give it a bit of movement. The thick side-branck you can let grow for a few years,m so to add girth to the base. When the trunk is getting close to the size you want, Yin the side-brnach. Meanwhile keep working on fine branching & backbudding on the main leader.
